How to make vegan chocolate cupcake

What do you need to prepare?

 

 

1 cup - 120g all-purpose flour

3/4 cup - 90g cocoa powder

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup - 120g granulated sugar

3/4 cup soya mylk

3/4 teaspoon apple cider vinegar

1/2 cup coconut oil melted or vegetable oil or half and half

1/4 cup warm water

1 teaspoon vanilla extract

Let's start!

 

 

Preheat the oven to 350f - 175c and prepare your cupcake tray with cases.

 

Place the dry ingredients (exclude sugar) flour, cocoa, baking powder, bicarb soda and salt in a large bowl and mix till incorporated. 

 

In a separate bowl place the soya mylk and vinegar and whisk then set aside for about 10min. 

 

Add the sugar, water, oil and vanilla extract to the mylk mixture and whisk. 

 

Now add the wet ingredients to the flour and mix till incorporated. Be careful not to over mix as this can make the cupcakes come out not so happy. A little lumps and bumps are fine. Place in the oven and bake for 20min.
